Jamie Erickson, owner of Poppy’s Catering and cafe, saw that New York City had a need for “simple beautifully done food,” and she knew that she had the passion to bring a fresh new take to the catering industry. When the COVID-19 pandemic halted her catering and cafe business, she pivoted to find a way to serve her community safely and maintain her employees. She shares her struggle and her journey of recovering during this surreal time.
